There 2 different methods to separate the egg yolk from the egg white:
- The Shell-to-Shell method, in which you move the yolk back and forth between the 2 halves of the broken egg.
- The Hand method is in which you let the egg white fall between your fingers.
Shell-to-Shell method:
- Crack the eggshell and open the egg over a bowl.
- Pass the yolk from shell to shell until all the white falls out of the shells and into the bowl.
- Slip the egg yolk into another bowl.
Hand Method:
- This method requires impeccably clean hands.
- Crack and open the egg, holding the halves in your hand with your fingers slightly splayed.
- Let the whites fall through between your fingers into a bowl.
- If you are separating a lot of eggs, you can work over 2 small bowls, one for the whites and another for the yolks.
- Transfer the contents to larger bowls every few eggs. This way if you break a yolk into the whites, you don’t ruin the whole batch.
