Pasta dough or simply called pasta can be made in a food processor in about 1 minute. It can be kneaded by using your own hands, as you would bread dough, but an easier technique is to work it through a pasta machine/device. A pasta machine is a set of rollers through which you will roll the dough/pasta in the successively thinner way until you reach the thinnest format. In the end, the pasta is almost translucent.
- Combine 3 cups flour, 4 large eggs, 1 tablespoon olive oil, and 1 ½ tablespoon of cold water in a food processor.
- Process for about 30 seconds, until the mixture is consistent of coarse sand.
- Pour the mixture out onto a board and knead it with the heel of your hand until it comes together.
- Divide the dough into 3 or 4 manageable pieces.
- Set the pasta machine on its thickest setting and roll out the dough one time.
- Fold the pasta in half over itself once or twice and roll it out again.
- Repeat this process until the paste is smooth, doesn’t tear, and has the texture of suede.
- Set the rollers on the machine to progressively thinner settings, rolling out once at each setting.
- Cut by machine or by hand into the desired width.
