How to make fresh pasta?

Pasta dough or simply called pasta can be made in a food processor in about 1 minute. It can be kneaded by using your own hands, as you would bread dough, but an easier technique is to work it through a pasta machine/device. A pasta machine is a set of rollers through which you will roll the dough/pasta in the successively thinner way until you reach the thinnest format. In the end, the pasta is almost translucent.

  1. Combine 3 cups flour, 4 large eggs, 1 tablespoon olive oil, and 1 ½ tablespoon of cold water in a food processor.
  1. Process for about 30 seconds, until the mixture is consistent of coarse sand.
  1. Pour the mixture out onto a board and knead it with the heel of your hand until it comes together.
  1. Divide the dough into 3  or 4  manageable pieces.
  1. Set the pasta machine on its thickest setting and roll out the dough one time.
  1. Fold the pasta in half over itself once or twice and roll it out again.
  1. Repeat this process until the paste is smooth, doesn’t tear, and has the texture of suede.
  1. Set the rollers on the machine to progressively thinner settings, rolling out once at each setting.
  1. Cut by machine or by hand into the desired width.
