1. Start with old eggs
Old eggs peel more easily, so you will not risk tearing up the whites. Using old eggs is the best way to ensure your eggs are easily peel-able.
2. Bring it to a boil
Place your eggs in a large pot and fill with water. Bring the water to a boil over medium heat, then turn off the heat and cover with a lid.
3. Set your timer
This is the most important step of all. Follow this scrupulously! If you are looking for soft-boiled eggs, set your timer for 7 minutes exactly. If you want hard-boiled eggs, set for 11 minutes. (We are really serious about this) While the timer is going, get a large bowl of ice water ready.
4. Shock it
As soon as your timer goes off, transfer your eggs to the ice water. Shocking the eggs helps halt the cooking process; they only need to stay there for a minute or two.
5. Peel it away
Peeling will now be quite easy, however if you’re struggling with a sticky shell, run the egg under cool water while you peel; the water will help separate the shell from the egg.
